Removing/Hiding "assigned" name in forwarded incident

Wondering if there's a way to hide the "Assigned" name in a forwarded incident sent from the agent console. We are trying to protect our agents' privacy and are wanting it to only show a display name or no name in that field. Right now it's pulling the agents first and last name. In the attachment, the screen shot shows what a forwarded incident looks like. Below the question reference number is where the first and last name shows to whoever we're forwarding to.
