Documenting current system configurations and setups

I am planning on starting documentation on the current configurations and setups of our OSvC system, as currently I am the only one within our organization that has full understanding of how our system is setup. I'd like to include workspaces and workspace rules, nav sets, profiles, categories and dispositions, business rules, etc.
However, I am having a hard time getting started. I'm thinking of following the format of the documentation here: https://docs.oracle.com/en/cloud/saas/service/18c/famug/index.html. Has anyone else done something similar that could give some advice? Is there some sort of existing template or similar documentation I'd be able to use?
