Hide/Remove a custom menu option but still show the selection on reports

We have a custom menu that lists the training classes we offer during the year, that we use in our registration process.  Once a specific training date has filled up, we need to prevent people from selecting the full class on their registration.  Removing that class from the custom menu also removes that "choice" from the reports and results in "No Value" showing on the report. How can we save the class choice the individual made so it will display on our reports, while still preventing the selection of that "choice" by new class registrants?

I'm not very familiar with custom menu's, so any help pointing me in the right direction would be appreciated!
