I just finished installing 11gR2 XE edition for testing our eCargo application for small clients.
Problem is the instance it creates it is in UTF8, correct?
So whenever we import Greek characters in the database (10gR2 with AMERICAN_AMERICA.EL8ISO8859P7 charset) it uses two chars for one greek character.
Is there any way we can make the XE instance to run into ISO8859 charset instead of UTF8?
I read already some topics and some guys say it's done with alter sys tables while others say no.

Yes, one way would be to pre-create tables using character semantics. E.g. table(column varchar2(100 char)) to state character semantics explicitly for character columns.
XE docs mentions this in a few places, about Length semantics. There's more if you search the full doc library: example search.
