You can disable all Alert monitoring rules for one asset by selecting all rules and then disable them. You can do it using the monitoring tab and then click on "Select all rules" and then click on all "Disable Alert monitoing rules".
NOTE: I don't know if there is a way that does it for all assets at once.

I believe you can disable the alert in the monitoring profile and then force a profile update for all your servers.
I don't seem to be able to edit the default monitoring profiles from the EC. I don't even seem to be able to delete 'em. Anyone try to edit the .xml file and restart EC?
We found the only way to do bulk changes was through the API. In our case, we've spent enough time digging in the CLI (since it's written in python/jython), we added a couple calls to the API into there and were able to do scripted changes to the profiles. You have to understand the java side of things to get there, but it's easier (IMO) to invoke from the CLI.
Edit: oh, and we copied the defaults, labelled them with our own names, and edited them from there.
