As database version is different and If your business is OK for 2 days downtime then expdp and impdp is better option.
Parallelize your expdp and impdp operations so that downtime could be further reduced.

Have you considered using Oracle GoldenGate for your upgrade. You should read this book "Zero Downtime Database Upgrade & Active Active Replication Using Oracle GoldenGate 11g Release 2" which explains in detail step by step same scenario of upgrading 10g db from solaris to 11g rac on linux. Hoping that may help you.
Make a clean Oracle RAC installation on the new production enviroment, with last patches. Later, stop business and generate datapump export files on current >production enviroment schemas (bussiness schemas) and load that datapump files over the new production enviroment. I estimate two days (saturday + sunday).since you have complete new setup for this upgrade,so i would suggest you to perform one test run of this upgrade on this new setup and calculate how much time it would take to perform expdp-impdp and based on this you can plan final activity.
