I've found this article, https://blogs.oracle.com/aia/entry/aia_11g_best_practices_for_dec to be very useful in terms of understanding how SOA composite applications SHOULD be developed. However I'm faced with being responsible for a number of SOA applications implemented using concrete WSDLs and potentially looking at updating them to avoid the "composites being unavailable after server restart" issue. Is anyone aware of a process or method that would allow me to refactor these existing projects? Or would it be better to start with a fresh project and copy and paste from the originals (this would be a laborious, time-consuming task).

You can refer the below URL for more details.
I feel better you can change the existing project to implement the abstract wsdl..
