Can I install in the same machine Oracle Client 11.2 32bit togheter Oracle Client 11.2 64bit?
And if is possible, can I decide wich one use in my connection string? No. That's determined by the reference and the bitness of the application (32 or 64).
I must use 32 bit odp.net for entity framework, and 64 bit odp.net for direct connection... why? That doesn't make any sense. (Also, it isn't possible in the same program.)

Should I create a software that uses up to 40GB of RAM in a single process, only possible with 64-bit client. The software uses parts with entity framework and linq to entity, but there is no 64bit support for entity framework.
Yes there is. There's no support for the Entity Framework designer in 64 bit, because Visual Studio is a 32 bit application.
EF code itself will run just fine in a 64 bit application.
