In status MOUNT, you can already use almost all v$-views, especially v$datafile.
"Don't believe it, test it!"
select file#,ts#,name,status from v$datafile;
Also, check if you are getting any ora-600 error in your alert.log file.
Undo tablespace and datafile would be used, if you have got the automatic Undo management enabled. If you are not sure about the backups of yours taken for it, I believe on metalink, there is a note which explains how to start your db in the manual undo management and then open the database(would require a trick to be involved) .
set newname for datafile X to '/location/undotbs01.dbf';Wouldn't help.
You'd have to RESTORE and RECOVER the Undo Tablespace datafile if it was active in the database at the time of the crash.

I cannot open the database because the my undotbs01.dbf file is corrupted :
SQL> connect sys/... as sysdba
Connected to an idle instance.
SQL> startup mount;
ORACLE instance started.
SQL> alter database open;
alter database open
ERROR at line 1:
ORA-01092: ORACLE instance terminated. Disconnection forced
