Can someone point me towards the correct documentation for setting up 2-way encryption between a client odbc driver and the database prosuably using Oracle Net along the way?
I'm not sure what to search for, or if I'm using the correct phrases for describing the problem

As the encryption is done in the sqlnet layer, then yes, your "possibly (?) using Oracle Net along the way" is exactly what it's doing.
Consider the overall architecture:
Since the encryption described is done by sqlnet, that is occurring between steps 3 and 9
