Ummm, I see how we got our wires crossed -- that is not quite what I meant.
The date picker lets me chose a date, and I can set an initial date via the setValue() method.
But the date picker control doesn't give any way (that I can see) to chose a time, like 5pm on Dec 15 1972.

That's right a DatePicker is for choosing dates not times.
If you want a TimePicker or somthing that combines picking both Dates and Times, then write one, there is no pre-defined control in JavaFX for that.
Ok thanks for that. Just clarifying if there was something I was missing about DatePicker.

I know the date picker picks dates, but I was wondering if anyone had any information about the implementation of the features outlined in
Are these features planned for some future date, or have they been shelved? e.g. times, time zones, offsets etc that are in the "Nice to Have Functionality" section.
I am not sure of the relationship between OpenJFX and JavaFX, so I may be asking the wrong people ..
You are asking the right people (at least some of them). I personally don't know the answer to your question though. If you don't get a reply here in a couple of days, ask the openjfx-dev mailing list and they should sort you out.
