Our AMI's already have a vnc server installed, you just need to start it. You would also need to open up the necessary ports in your EC2 firewall. I recommend only allowing access to ports from your IP Range for security purposes.
You can use ssh tunneling as well. This works behind corporate firewalls whereas opening the ports in the security group may not.
Correct, that's how we do it, tunnel 5901 using Putty Tunnelling and VNC is secure.
