Setting up Email Notification to Customer with PDF of Approved Sales Order

I would like to set up email notifications for our customers when their order is approved.  We already have them set up for fulfillment, but need an extra email for this step.

Through SuiteAnswers, I've already figured out how to send the email alerts, but I'm not sure how to add a date - as it stands when I previewed, this would send approval emails out for all orders since 2011 - definitely not what we want to do!

Is there a way to

a. Customize the date for just the last few days? Or a specific date?

b. Add a PDF of the approved order to the email
