PDF Form Prints

I am attempting to customize our PDF output forms to include the customer's fax number on the Quote, Sales Order, and Invoice.... and the Vendor Fax # on the PO's.  I have looked into all of these forms in the Customize Forms dialogs and also in the PDF Format customization.  The farthest I can drill down into any of these is "bill to" and "ship to".  Is there a way to add these into the form for selection as a body element?  Even as a custom field in the PDF layout.... what would be the syntax for the {xxx} that
