Adjust Column Width and Count in Custom Search Portlets on Dashboard

Is there any way or workaround to adjust column widths and number of columns shown on in Custom Search Portlets on Dashboard?

I have my dashboard set so these are full page width, but the column widths just expand rather than showing more information (ie columns that are hidden from view).

Also is there are way of choosing NOT to show New, Edit and View columns (as these often take up space that I would rather use for other columns)?
