How to customize the sales order form from the Classic Disclaimer Transaction Layout?

I customized the sales order form from the Classic Disclaimer Transaction Layout.

Below are my questions:

1. How to remove the label etc.? For example Doc. No is showing both as the label and data.

2. How to add the fields? Is there any way to see the sales order table when adding the fields and how?
