Find Ship and Bill Country on a Sales Order

I've created a workflow that sets a field value if the bill to and ship to countries are in a certain list.  I only see Ship To: Address and Bill To: Address available in the visual builder so I'm using "contains" to find countries.

Obviously that's not ideal since a customer could live on Luxembourg Avenue in Brazilville.

Any idea how I can access the country without resorting to a formula that parses out the last word(s) in the address?
