Website Redesign: Best Practices

The company I work for is planning on redesigning the current website.
The redesign will include (but not limited to) a complete restructuring of the current category arrangement.

What would be the best way to do this to insure minimal disruption when applying the newly designed site?
(Optimally, we would want to perform the design/structure swap as quickly as possible and in one session.)
