Restricting Access for Standard Fields

How do you restrict access to standard fields with the same level of control you have for custom fields? For example, Terms is an out-of-the-box Accounting List field.  I want to restrict access to make it view-only for non accounting roles.  I know I can accomplish this by using different forms, but I'd prefer it to be universal at the field level.
