Defect: 163668 Transaction Item Options Broken

I am seeing a disconcerting problem in our webstore. Items that have worked fine for months are randomly breaking. The options on the item stop displaying correctly. They only show the label of the option and not the input area.

Has anyone else seen this problem occur?

The current fix is to create a new item whenever this happens or wait for a few hours to a few days and the problem sometimes fixes itself. Obviously this is much less than ideal.
