System notes data

I have the ODBC connector so I have access to all the NS tables. It is often difficult to figure out the mapping between tables even when you have the ODBCViews PDF file as a reference.

I need to know how the system notes are stored. So for example I want to know which Employee last edited an Opportunity record. The NOTES_SYSTEM table doesn't give me the information I need directly so where is it stored and how do the mappings work between tables?

Any help would be appreciated.
