Field Change Date

I'm trying to calculate how long it takes for a custom field to change from blank to yes or no.  I was working through a couple of other posts but i couldnt get it right. 
Can someone help me on this?
Its a custom field on the sales order.  It defaults to 'Blank'.  When we have discussed certain terms and conditions with the customer, the field gets change to yes or no.  I need to calculate how long it takes for the field to go from blank to yes or no.
