Hiding Non-Inventory Items on Add to Cart Click.

We are a non-profit organization that has a Child Sponsorship Program.
We want to have a customer come to our web store and browse the unsponsored children and be able to Sponsor them.

Question 1: When a customer adds a Child to their cart, I want the child not to show up for any other customers. Is that possible?
People get attached to the Children very quickly and we can not have the same child in the Cart for 2 different customers.

We are thinking that we can use JavaScript to uncheck the Display in Web Site box, but we are not sure of the ramifications of that. Will it disappear for the current customer at that point?
