Dynamic Default Behavior

I am always puzzled about the behavior of dynamic defaults.

Can someone explain why the defaults do not populate when the field is set to save value?  I need to view the originating SO in a fulfilment search.  This field isn't accessible normally (which in itself is strange) and must be sourced into a custom field.  While custom code can easily copy this over, it wouldn't seem to be necessary.  A dynamic default can source the value from the sonum field.  However, it doesn't work if the store value option is selected.
