Kit items vs Assembly items with "special work order item" turned OFF

I could test this with a number of new fake items and test orders and figure it out, so I admit I'm being lazy. It's also nice having the data in here for other lazy people.

So, Kit items vs- Assembly items with "special work order item" turned OFF... Do they perform the same? Do they both pull their components out of inventory? With "special work order item" turned ON, I know it makes a work order, and you have to go through those "BUILD STEPS" to fulfill an order. With "special work order item" turned OFF, can you skip those "BUILD STEPS" and just fulfill the order, and it pulls the components out of inventory (like a kit item does) or do you still have to build?
