Workflow on Quote/Estimate - 'Entity Status' not an option for Set Field Value action.

I'm trying to workflow some preset data when a quote is created via the webstore and one thing I need to do is set the Status or Entity Status field of the quote. But, when I look through the list of fields to select from in the Set Field Value action, I can't find this field or anything relating to it.

Any ideas?

Status, Entity Status, Customer Status, Estimate Status, Quote Statust, Transaction Status
