We want to make a demo to a prospect and we need to customize an FDI demo environment. We know that when refresh occurs all customizations are lost so how to check what is the environment refresh date?

I'm not aware of a direct way to view an 'FDI environment refresh date' from within FDI.
If your concern is the loss of customizations due to an environment refresh, I would recommend checking the refresh schedule/history of the associated Fusion Applications environment (for example, P2T/T2T refreshes), as those refresh events can impact FDI.
If you're looking to identify the last Fusion Applications refresh, the following query may be helpful:
select * from ask_deployed_provision_configs last_update_date column in this table gives the completion date of last refresh.

You can check the last data refresh completion time in AI Concierge within FDI - see attached screenshot as example.
