You can customize the columns by creating your own view of the inbox. You can select whichever columns you want. You can use flex fields to add columns with data from the form. These changes are process/user activity specific so you can have a different view for each process.

I'm sorry, user586942, but you'll need to be more specific. In BPM 11g, there are a number of components and I just don't know where you are seeing the bulk actions option. It is not in Workspace or Composer and I don't think you mean JDeveloper. Do you mean in WLS console? Enterprise Manager Fusion Middleware Control? These have bulk actions but it doesn't seem that is what you mean either. I'm sorry, but I don't know what you mean.
From what you're describing it sounds more like you're working with the 10g release than the 11g release.
I'd check the "Help" link from within the workspace to ensure you're on the correct version. In 11g you will see references to version 11 when you expand the "Contents" section in the left hand frame. 10g will show "BPM 10.X WorkSpace" in the left frame.
You are right the tool is BPM 10g and NOT BPM 11g, specifically workspace where you have add/remove columns and right next to it is the "Bulk Actions" Select Actions column.

1. there isn't an not out-of-the-box way to hide the bulk actions menu, as far as I know. you'll have to mess around with the xhtml under the webapps/workspace/jsf folder. Take a look at a file called viewPanelTemplate.xhtml. You should be able to comment out some markup to get rid of that drop-down.
2. don't know. i know of a way for external variables using localization, but not sure about predefined variables
3. depends on the type of customization. If the customization is done by implementing a custom style resolver, you can code the implementation to conditionally apply certain styles based on any aspect of the instance being rendered.
