I haven't seen any clearly documented statement which suggests or shows how to use OrdVideo to convert from one format to another.
Is there an example anyway of such conversions being done using OrdVideo?
e.g. convert the contents of a ordVideo column from "m p e g" to "a v i" (word checker doesn't like these words).

The OrdVideo composite data-type does not perform any format conversions. It just stores the data for you.
You can convert from m p e g to a v i using 'FFMpeg'. Search the net for it. I have a database plugin that you can use if you are interested. It will allow you to convert formats within PL/SQL by interfacing to 'FFMpeg'. Contact me offline if you are interested.
