I know the current version of the connector does not support inferred entities via BO Mappings... Are we planning to release this in a future patch? The youtube video below makes it seem like it was part of the original scope.

The YouTube video has been updated to reflect this limitation in BO Mappings for Determinations Server. Note that BO Mappings for Web Determinations do not have this limitation.
When you say that OWD does not have this limitation, you mean that we can have inferred entities in the rulebase but they will not be mapped in the BO Mapping administration screen at all. It gives us the "illusion" that we do not have this limitation, but we still cannot get the info back to Siebel without leveraging IOs or some form of customization. Correct?
Inferred entities in Web Determinations will be saved into the Session Data when called. This is regardless of any mapping for a BO mapping, as these mappings are used only for importing data into a session.
An inferred entity is, by its nature, only exported from OPA, and for Web Determinations BO, you should see them in the resulting Session data after a save has been called.
