Where do want to add the field? Is it at the header level or the line level in the notification. If it is header level, then you might considering creating new header attributes in the workflow, copy these attributes to the notification and then set the values.
If it is at line level, you have to customize the line level region and then personalize the add the fields and use custom controller etc to achieve your requirement.

I want to add new fields in the line leve, so is this OAF customization? I have seen that this workflow calling "PO_WF_REQ_NOTIFICATION" pkg in which they are using the html tags to build the notifiation. I tried to modify this pkg but the changes are not reflecting.
I also found some other issue as when ever i modify the PO_WF_REQ_NOTIFICATION body and start testing all notifications are erroring out with the error message "Error in Workflow REQAPPRV/22029-34073 ORA-04061: existing state of has been invalidated ORA-04061: existing state of package body "APPS.PO_WF_REQ_NOTIFICATION" has been invalidated ORA-04065: not executed, altered or dropped package body " but the pkg spec and body are both valid. I google the error and i found some hits in which if i log out and log in it works and it is working for me some times and sometimes not....
Yes, it has to be OAF customization... you might need to customize the region, extend and substitute the VO to add new attribute and populate that attribute value in extended CO.
