It can be defaulted based on your Ship To location of your PO.
In Location setup, you can enter the Inventory Organization. It will be defaulted to your PO.
yOU have to set the location with that employee.
Following is the Navigation path.
(1) Select HRMS Responsibility
(2) Open Form : "Enter and Maintain"
(3) Create New Employees or Run the Query and retrieve the details of
(4) Select "Assignment" button.
(5) Select the Location from LOV.
(6) Save the record and retry for Requisition.

Click on any field on the lines region and the following fields get defaulted except the organization field :
I need the Organization to also get defaulted.
You can satisfy your requirement once you go for the setup I have mentioned in my earlier post.
pl. check in TEST.
Do the following procedure.
Step1: Assign Inventory Org to Your Location
Navigation: Inventory --> Setup --> Organization --> Location.
Query your location.
Click on Other Details Tab, and assign your Inventory Organization.
Then we will see the default organization in Requisition work bench.
The Inventory Organization field from the location window(Other details region) is protected for update and that is the reason why I can update it.
