Old data source connection seems to keep living

We have a SOA Suite 11g installation on a weblogic server, on the weblogic server we have a JDBC data source that connects to an Oracle database.
This is the case for a production and a test server. On the test server we changed the database we connect to and restarted the server, but the service keeps randomly writing to the OLD database. We then completed removed the data source and recreated it, but it still writing to the old database.
The strange thing is that is not consistent , sometimes it goes to the new database, sometimes to the old database. It seems like there is some connection that is kept alive, but I wouldn't expect that because we recreated the datasource.
Anyone ever encountered this kind of behaviour?
