Well, in the end I just moved the old Oracle VM Manager 3.1.1->3.2.1 failed installation to one side and installed a fresh 3.2.1 with a MySQL back end (so not reusing the OracleDB 'OVS' database either). I had to do some renaming of things from UUIDs to human-redable names again (required some trawling through "vm.cfg" for disk image and VM names) but otherwise it was just a case of gaining ownership of the VM Servers scanning physical disks and generally rediscovering things and stuff.
Annoying. But in the end at least I know my Manager installation is fresh and clean.
You should be able to use the info in the following doc to make a backup of that info in the event you upgrade again:

I believe there was another note mentioned in 1351518.2 that provides more backup info.
