RMAN will not create standby logfiles, you need to create it manually, and there is no need for standby logfiles on primary for setup unless there is a strong planning and vigilance for the role reversal...Protection Mode Performance is the default, so start with it as it is the best mode when nothing can be decided.
I need to create physical standby , can any one share some good document to create physical standby in 11gr2.

Please clarify this below Questions:
1. HOW TO CREATE SRL (standby redo logs) , need to in create Primary or standby?
You must use alter database add standby logfile .. command for create SRL.
SRL must be add to Standby database, but when role transmition, old primary become new standby, then
you must add SRL to both side. SRL require for Real Time Apply.
2. If we are using RMAN is it necessary to create SRL or RMAN will take care?
SRL is not depend RMAN.
3. What is the Protection Mode we need to set? If its PROD / NON-PROD ?
Protection mode is your data guard configuration protect data with standby side.
If protection mode is Max Availability and Max Protection, then transport service must be SYNC.
If max performance then must be ASYNC. SRL is require for MAX Protection and Max Availability mode.

Regardless of the Protection Mode, you should always create Standby Redo Logs (SRLs) on the Standby - especially also for Maximum Performance. In order to keep the same Redo Transport Method available after a Switchover, SRLs are also recommended on the Primary.
If you create them on the Primary first, RMAN will automatically create them on the Standby during the DUPLICATE TARGET DATABASE FOR STANDBY command since 11g.
