ORA-27037 means its missing file, usually an archive redo log or a param file.
under sqlplus in your server:
show parameter spfile;
select * from v$parameter;
and check your init.ora file.
Most likely you are hitting a bug -

Looks like issue with storage . which is causing ora-00600 error , which is related to undo.
Please drop and create undo tablespace .

when i try to perform update and insert statement i have the errors i mentioned above.
My undo tablespace is also offline...

If the same ORA00600 then yes UNDO is the issue .
Undo segment shrink is internally done by Oracle.
Check you alert log for such errors.
SMON: about to recover undo segment <usn>
SMON: mark undo segment <usn> as available
The affected undo segments shows some cycle in the block chain,
which causes the transaction recovery to spin.
Drop the undo segment.

I would look into metalink or open an SR with Oracle if I get ORA-600 error in production.
Every occurrence of an ORA-600 should be reported to Oracle Support. Unlike other errors, you can not find help text for these errors. Only Oracle technical support should diagnose and take actions to prevent or resolve damage to the database and ORA-600 error generates a database trace file. Please send trace file Oracle support
