Well, it looks like the list of metadata fields shown DOES adhere to the profile - perhaps we have to reconfigure the profiles.
The VCR_GET_CONTENT_TYPES and VCR_GET_CONTENT_TYPE services are called. For a profile called "Document" the URL
returns the proper profile.
Please let me know whether you have configured OHS with Oracle WebCenter Portal and Oracle Content Server (UCM)?
Noet that OHS is also required for Single-Sign On to function properly between Site Studio and WebCenter Content. If OHS is not configured, certain functionality will not be available, such as Document Manager document rendition support, advanced metadata edit, and the IFRAME functionality.
You have configured OHS with Oracle WebCenter Portal and Oracle Content Server (UCM).
If you configured SSO it will automatically redirect to Edit Advanced MetaData Page.if SSO not configured you need to Enter username/password for the same.

I am just wondering about the Advanced Metadata that is displayed (not the edit page, the document information page). What is the selection exactly based on? It doesnt't match the profile, nor does it show all metadata.
Good way to get the details would be to do more tracing on WCP and WCC , as follows :
1. WCC :
Navigate to System Audit Information - Tracing Sections - Active sections and clear the existing trace sections , add the following :
socketrequests,requestaudit,system + Full verbose trace
2. WCP :
Trace 32: Finest
With these 2 logging in place , run the same test case and then check the ucm server log , wcp diag log to see the exact service call along with the parameters used . That will give the exact details you are looking for. If this is still not helping , I will check on my test instances and let you know the details .

Screenshots are mostly in Dutch, but I think you can get the idea. Below, see the metadata bit that is shown in the portal:

This is the same document, but in the Content Server:
As you can see it is displayed in its profile, and the selection of metadata fields as well as its order is quite different!
The wwFldLibrary field is shown even though it should be hidden, the "Taal" field is not properly translated and for example "Vindplaats" and "Integriteit" are completely missing.
I will also look further into the trace, but as you know that can be quite time-consuming. That's how I found out Portal is probably calling the VCR_GET_CONTENT_TYPES and VCR_GET_CONTENT_TYPE services for this. But then the result still doesn't make sense to me.
Please confirm me the version of WCP you are using and it looks like Fields hidden in a UCM Content Server profile are visible in Documents Advanced Properties viewer.
Similar issue is addressed in below document and it says that the issue is fixed in 220.127.116.11.0
