This table has all the source code in the database. It is a dictionary table and no one should use it except for query if needed (both from front end and back end).
All the packages, procedures, functions, types, etc. are stored in it.
SYS is a seeded account and it's objects should not be touched or manipulated in any manner.

We have noticed that the size of SYS.SOURCE$ table is becoming huge.The row count keeps increasing.
Hence I wanted to know what kind of information is stored in table/when is a new record get inserted in this table ?
Pl quantify "huge". As noted above, SOURCE$ stored source code.
Select count (*) form sys.source$
This is normal in an EBS database.
How did you know that the row count grows over time?
It usually increases after applying patches or creating stored procedures manually.
