It changes to NULL after successfully sending the email.
Have you check the workflow mailer activity page in OAM to verify that there are no pending notifications in the outgoing queue?
If successfully sending mail, the mail status should change as "SENT" but for me its NULL.
I can see the notification status as OPEN and with mail_status is NULL.
I searched Metalink for mail_status as NULL and it pointed to the preferences value. It is assigned correctly.
share some inputs to troubleshoot further.

This was caused due to authentication issue from SMTP server for the outbound user.
