Shipping Carrier and Shipping Method Fields

Has anyone noticed a difference in the way the Shipping Carrier and Shipping Method fields behave on Sales Orders? We used to be able to set the Shipping Carrier field to More and leave the Shipping Method field blank. Now when we do that, the Shipping Carrier field automatically changes to UPS. Since I can't seem to create a saved search of all sales orders where the Shipping Carrier = UPS, I'm doing a search where the Shipping Method is blank. Is there a way to default these fields? I briefly tried to set up
