Customize Inventory Detail List

Is it possible to customize the list of lot / serial numbers that are displayed when fulfilling a sales order? We have items that are in certain bins that we don't want selected. We also have inventory with Statuses that are set so they're not allocating to sales orders. Why are they shown as an option for fulfilling?
