Task Status based on User Assignee

We are trying to track latencies on project tasks. Since Netsuite doesn't date stamp when an Assignee/Resource has been assigned, only other changes like task start date or status. I'd like to capture when than user was assigned. I am struggling to find the Workflow path to update a task status when a specific Assignee is set.

i.e. When I assign 'Bob' to invoice, the status changes to in progress

As a bonus, is it possible to also update the start date once a specific name is added?
