Inventory detail form - Can I grey out certain fields on the form.

I have a client who requires certain fields to be greyed out on the inventory detail form. I tried to check if customize the form or even use workflow but I wouldn't access this form. We also tried using scripting
Inventory detail form - linked to the following transactions: Bin Transfer and Inventory Transfer
I want to unable or grey out the TO STATUS
The reason why this is need, because they only want the status to be changed by transaction Inventory Change status and only a specific department will be able to make those changes.
