How can I set up very restricted permissions for a role?

We have a role that we want to only be able to edit sales orders and I only gave them permission to edit sales orders and view the one search on the role record, but when I use the role, I still have access to change a lot of other things. Can I restrict permissions for a role so they can only view one search and edit the sales orders on that search?
