How to calculate Sales Order Lead Time?

I am trying to find an average of how long it takes us to fulfill orders from order creation until the Item Fulfillment record is marked shipped. I tried searching everywhere and I couldn't find any documentation on it. Any advice would be greatly appreciated! Thanks!
