Why are my Gross Amt and Tax fields not visible / greyed out on my Custom Form?

Hi,

I have the 'Per-Line Taxes on Transactions' checked on my Setup taxes and have the Tax Fields and Gross Amt greyed out on my Custom Form.

Can someone explain to me why this is?

Understand that some fields are hidden due to the Per Line Taxes on Transaction config, but I don't understand why the Gross Amt is not shown on the actual sales order?
