Can I change the default out of stock error message?

On an item record it says in the out of stock message field that it replaces the default error message. Can I change the default?

At the moment, I'm having issues with matrix items because in the webstore the default message is wrong and not even reliable? In the below example, these matrix items have different out of stock messages, yet none of them have an out of stock message set.

The child matrix items, when selected have the correct out of stock message.
