How do I unlock my Custom Item Field for matrix option?

I thought these fields for the matrix options got locked once their related Transaction Item Options are added to the website configuration under Advanced > Item Options

But I can't get the above mentioned Item Field to unlock by removing it from the config.
I have other Item Fields that ARE mapped and AREN'T locked so I don't know if I'm right. I also don't want to go fiddling with this too much as it's live on the website and could end up taking items off sale until it's finished.
