Workflow Reminders

We have had a request from the business to find out if reminders can be sent for workflows that haven't been approved for a while.
We found this reminders sections in the workflow configuration section and are unsure how this works. Does anyone have any experience of this or guidance on how to use this? We'd like to set up a reminder up to be sent after 10 days to the current assignee to remind them to approve.
Is this how this works, or would it be 10 days after it was submitted, keen to understand because if a workflow has two approvers, if approver 1 approves it after 9.5 days, it seems inappropriate for approver 2 to receive a reminder after a few hours.
