Help on use of expression language (EL)

Summary:

We are trying to make a number of fields display only in our application based on status of a project and the role you have.

What I like to know is what bindings you can use on a page. Can you use fields that are not displayed in the page itself?

I have looked at

and

The last one helps me for the second part of the condition. I can check if you have a specific role. But what if I want to use project status, but project status is not on my specific page. Will that work?
